Description of problem:

Latest pipewire package is lacking symbol pw_stream_peek_buffer but libmutter-2.so.0 requires is linked against that and gnome-shell won't start because of that.  Rollbacking to previous pipewire version solves the problem.

This was hidden really deep in the logs:
 Jul 20 18:32:12 otto org.gnome.Shell.desktop[28021]: /usr/bin/gnome-shell: symbol lookup error: /lib64/libmutter-2.so.0: undefined symbol: pw_stream_peek_buffer
