Unneeded dependencies are specified in libmicrohttpd.spec:

* OpenSSL is not required
* Libgcrypt is not required with GnuTLS >=2.20 since MHD v0.9.56

In addition, as tests are disabled, libcurl is not required too.

Looks good.
As additional fine-tuning:
* Tarball link better to update with "https:" instead of ftp, as FTP is deprecated
* There are examples in src/examples and in doc/examples, both could be used (instead of only one directory)
